Hummus Recipe

Ingredients

1 can chickpeas, no added salt, drained

1/4 cup olive oil (approx.)

1 heaped tbsp tahini

¼ tsp smoked paprika

1/8 tsp cumin (small shake)

¼ tsp salt

2 tbs lemon juice (1/2 small lemon)

3-4 small ice cubes

1 clove garlic, peeled OR 1 tsp minced garlic

Method

1. Drain chickpeas in a colander and rinse with water. Add chickpeas to a food processor or strong blender.

2. Blend the chickpeas with the ice and about half of the olive oil.

3. Add spices, lemon, tahini, garlic, and the remaining olive oil.

3. Blend until smooth (this will take a few minutes) and add oil until a thick consistency with no lumps is reached. It may require slightly more or less oil depending on the chickpea type and ice cube size.

4. Enjoy with vegetables sticks, crackers, on toast, and with falafels. Impress your guests by adding homemade hummus to a charcuterie board!!
