Dad’s hummus recipe (from the archives)
Hummus Recipe
Ingredients
1 can chickpeas, no added salt, drained
1/4 cup olive oil (approx.)
1 heaped tbs tahini
¼ tsp smoked paprika
1/8 tsp cumin (small shake)
¼ tsp salt
2 tbs lemon juice (1/2 medium sized lemon)
2-3 ice cubes (small size)
1 clove garlic, peeled OR 1 tsp minced garlic
Method
1. Drain chickpeas in a colander and rinse with water. Add chickpeas to a food processor or strong blender.
2. Blend the chickpeas with the ice and about one quarter of the olive oil.
3. Add spices, lemon, tahini, garlic, and more olive oil.
3. Blend until smooth (this will take a few minutes) and add oil until a thick consistency with no lumps is reached (may require slightly more or less oil depending on the chickpea type and ice cube size).
4. Enjoy with vegetables sticks, crackers, on toast, and with falafel. Impress your guests by adding homemade hummus to a charcuterie board.
