Chia seed jam

Looking for an easy way to boost your fibre intake that actually tastes good? This gut-healthy berry chia seed jam is for you!

Note: This recipe makes one medium sized jar of jam

Ingredients

  • 3 cups fresh/frozen mixed berries

  • 1 tsp lemon juice

  • 2 tbsp maple syrup

  • 2 tbsp chia seeds

Method

1) Place berries in a medium sized saucepan over low heat. Cook until just heated through (1-2 minutes).

2) Add lemon juice, maple syrup and chia seeds and stir for a further 2 minutes.

3) Take the saucepan off the heat and allow the mixture to thicken (5-10 minutes).

4) Transfer the jam to a reusable glass jar or a container once it has completely cooled.

5) Store in the fridge for up to 1 week.

Enjoy this jam with peanut butter on toast (my personal favourite combination) or added to your morning cereal or yoghurt bowl for some extra sweetness and fibre. Your gut will thank you later!
