How to make homemade muesli
This is the recipe that has supported my bank account and breakfast routine. No more needing to buy $10+AUD granola woohoo! This muesli recipe can be tailored to your flavour preferences and makes breakfast so ease to prepare on busy mornings. It also happens to be packed with fibre, protein, fats and lots of crunch and spice!
Ingredients
1.5 cups rolled oats
1 tsp cinnamon, ground
¼ cup seeds (my preference is sunflower and pepita)
¼ cup chopped dates (can use other preferred dried fruit instead)
¼ cup coconut, shredded
¼ cup chopped almonds or almond flakes
Pinch of salt
2 tbsp coconut oil
2 tbsp sweetener of choice (e.g., honey, maple syrup, agave, rice malt syrup)
1 heaped tbsp peanut butter
1 tbsp tahini (you can use nut butter if you prefer, however tahini makes a perfect consistency)
Method
1. Preheat oven to 160 degrees Celsius (fan forced).
2. Mix dry ingredients in a large bowl using a wooden spoon.
3. Melt coconut oil, tahini, peanut butter and sweetener in a saucepan over low heat until it forms a smooth and pour-able consistency. Stir thoroughly, to ensure the sweetener and coconut oil are combined.
4. Add the wet ingredients to the dry ingredients and mix.
5. Place muesli mixture on a lined baking tray and spread evenly to form a thin layer. (See the image below).
6. Bake for approximately 15 minutes or until the oats look caramelised and golden.
Serve with your favourite fruit, milk, yoghurt and of course a generous drizzle of nut butter!!
