Avocado toast (mediterranean style)
I absolutely love brunch! I mean who doesn’t love a great coffee with a side of avocado toast in Melbourne?!
Unfortunately, my bank account doesn’t enjoy this Sunday morning habit on a weekly basis. This sparked my interest in making avocado toast in different ways with unique toppings and flavours. If you have been following So Foody Dietetics for some time I am a Greek Foody with a huge page for Mediterranean cuisine…hence how I came to creating this recipe. My favourite of my many, many avocado toast recipes…which also happens to be the simplest.
It has become a Sunday morning ritual to make this fancy and special avocado toast recipe that is affordable & delicious. I hope you enjoy it as much as I do.
Ingredients
Toasted sourdough bread
Avocado smash (1 avocado, drizzle olive oil, 1 tsp lemon juice, salt and pepper to taste)
1 handful pomegranate seeds
1 handful crushed pistachios
1 handful feta cheese, crumbled
Few sprigs fresh mint, roughly chopped
Method
1. Combine the avocado smash ingredients in a small bowl and do not over-mix (I recommend using a fork to gently mash).
2. Crush/chop pistachios using a knife or mortar and pestle and set aside.
3. Toast your favourite sourdough bread lightly and then get layering.
4. Add avocado smash to the toast, sprinkle with pomegranate, crushed pistachios, crumbled feta, and mint!
